Royal Brackla distillery
La distillerie Royal Brackla est située d’après Michael Jackson ( pas le chanteur) dans la région Speyside, mais d’après d’autre source elle serait située dans le Northern Highlands.
C’est au sud de Nairn, dans la région de Cawdor, que la Royal Brackla a élu domicile. Non loin de là, on peut admirer le célèbre château où aurait vécu Macbeth. Le ruisseau qui coule à proximité de la distillerie porte d’ailleurs son nom.
Royal Brackla possède une cuve de brassage en acier inoxydable de 12.5 tonnes et huit cuves de fermentations dont six en pin d’Oregon et deux en acier inoxydable.
Bacardi utilise le whisky de Royal Brackla surtout pour les assemblages, mais des embouteilleurs indépendants le commercialisent aussi.
Le single malt de Royal Brackla est souvent fruité, assez sec et doté d’une finale puissante.
The Bottler : MacKillop’s Choice
Even though individual casks of whisky are distilled on the same day at the same distillery, the whiskies’ flavours and tastes, after maturation in separate casks, may differ widely. Lorne’s personal selection, Mackillop’s Choice, gives the connoisseur the opportunity to savour the rich quality and unique taste of single cask whiskies from different distilleries and of different ages.
Due to each cask’s distinctiveness, once the cask has been bottled, it cannot be replaced. Whiskies from distilleries that are no longer producing are especially demanded by collectors, owing to the dwindling availability of these casks.
All casks to be bottled as Mackillop’s Choice have been selected by Lorne Mackillop himself after careful tasting. He selects only those casks that have matured with an excellent balance of flavours.
These flavours derive from the original spirit, having been tempered by many years in an oak cask. The whisky extracts from the oak great complexity of flavour, by a process that is still not fully understood.
Lorne rejects approximately 80% of the cask samples that he tastes as not being of sufficient high quality to bear the label of Mackillop’s Choice.
The Speyside is a region that forms a core within the Highlands and that stretches along the Spey River. It goes even further, far beyond the lands of the Spey. Thus, the distilleries placed along Livet, Fiddich, Avon, Lossie, Findhorn and Deveron are also considered as a part of the Speyside. As it is not a geological unit, the boundaries of that region have never been set and sometimes, one could argue about the region from which a distillery comes from. According to the way we establish the boundaries, 63 of the 90 distilleries still in operation in Scotland are in the Speyside.
But why can we find as many distilleries in that area? As it was hardly accessible in the past, Speyside used to provide a good protection for distilleries that were usually illegal at that time. Later, when the railway was introduced and the roads were improved, the region still had the required infrastructure to interest investors. Besides, it met all the necessary conditions for whisky manufacturing, which are water, peat and barley in quantity.
